In order to create this attractive presentation, the carafe is suspended in the spring from the branches of the apple tree as soon as the first little apples appear. The apple then grows inside the carafe. When the fruit becomes ripe, the carafe is removed from the tree with its apple held captive inside it. The carafes are then filled with young Calvados at 70%, which allows the apples to settle down and stabilize. Several weeks later, they are emptied and refilled with Calvados. The apples then macerates gently in the Calvados. The end result of the Captive Apple is both visually attractive and very agreeable to taste. Colour, amber yellow. Clear and brilliant. Gentle attack, great aromatic intensity. Green Apple, geranium, minty. Consistent, slightly bitter, the first taste is all green apples. The finish is vegetal, with a lot of breadth. Present at the back of the nose. -

In toasted 400 l (88 imperial gallon) oak barrels, 50% of which are new. Bottled when ordered. Eyes: Golden yellow. Clear and brilliant . Nose: fine, complex, very intense. Aromas of apple, pear, vanilla and citrus with earthy hints . Mouth: Round and fresh. Shows fruity aromas, of vanilla and dried fruits. A well integrated whole with good intensity. -

×Calvados Original is a “white calvados”, aged for 2 years in old oak casks. Fruit forward, it is pale yellow in colour. The apples are mixed, crushed and pressed. The apple juice is fermented right out to give cider to be distilled. Double distillation is carried out one month after the fermentation has taken place. The first distillation gives the “petite eau” at 30% by volume and it is the second distillation, that of the “petite eau” which gives the Calvados. Aged at least 2 years. In 2000 to 3000 litre (440 to 660 imperial gallons) vats followed by 400 litre (88 imp gallons) toasted oak barrels, whose tannins have been exhausted, to allow the calvados to keep its original aromas of fruit. Bottled when ordered. Eyes: Water white with very pale hints of yellow. Clear and brillant. Nose: Powerful, fine, fresh and very complex for a Calvados of only this age, fruit at first then floral. The aromas of green apple and citrus predominate, with hints of cherry and floral notes. Mouth: Fresh attack, supple and round in the mouth, consistent, shows long and intense. -
